Ingredients
  

  • 1/2 cup Butteror Ghee (softened)
  • 1/2 cup Powdered Sugar
  • 1 cup All-purpose Flour
  • 1/2 cup Desiccated Coconut
  • 1/2 tsp Baking Powder
  • 2 tbsp Milk (For mixing)

Instructions
 

  • Step 1: Preparation
    Preheat the air fryer to 320°F (160°C).
    Cream together the softened butter/ghee and powdered sugar in a mixing bowl
  • Step 2: Mixing Dry Ingredients
    Sift in the all-purpose flour and baking powder in the same bowl. Add the desiccated coconut. Mix well to combine, adding 2 tablespoons of milk to achieve a soft dough consistency.
    Be careful not to overmix, as it can toughen the cookies.
  • Step 3: Shaping the Cookies
    Roll the dough into evenly sized balls and flatten them slightly into cookie shapes. I have used a scoop spoon to portion the dough, which ensures a consistent amount each time.
    Place these balls on a clean surface or baking tray lined with parchment paper.This dough will make 11-12 coconut cookies.
  • Step 4: Roll the Cookies in Desiccated Coconut
    Roll each cookie in desiccated coconut, and make sure it’s fully covered
  • Step 5: Air Frying
    Place the shaped cookies in the air fryer basket in a single layer.
    Air fry at 320°F (160°C)for 8-10 minutes until golden brown.
  • Step 6: Cooling and Serving
    Remove the cookies from the air fryer and let them cool on a wire rack.
    Serve warm or at room temperature for a delightful treat.
