- 1 cup cottage cheese
- 2 large eggs
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 apple peeled, cored, and diced
- 1 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- Butter for cooking
In a large bowl, whisk together the cottage cheese, eggs, flour, baking powder, baking soda, and salt.
In a separate bowl, toss the apple cubes with cinnamon and brown sugar.
Heat a skillet or griddle over medium heat and melt a bit of butter.
Pour a ladleful of batter onto the hot skillet and top with a spoonful of apple mixture.
Cook for a few minutes on each side, or until golden brown.
