Avocado Pasta Sauce

- fresh ripe avocados
- roasted garllc cloves
- salt and pepper
- lemon juice
- grated fresh parmesan cheese
Avocado Pasta
- Pasta spaghetti, linguine, or other shapes
- Salt
- Pepper

- Dairy-free milk optional

- Vegetables roasted tomatoes, zucchini, bell peppers

Avocado Pasta Sauce
Roast Garlic: Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast at 400°F for 30-40 minutes.
Blend Sauce: Blend avocado, lemon juice, roasted garlic, basil leaves, salt, and pepper in a food processor.
Cook pasta to desired texture.
Reserve 1 cup of pasta water.
Combine avocado green sauce with cooked pasta
Serve immediately, topped with Parmesan cheese or nutritional yeast.
