Fluffy Greek Yogurt Pancakes

Ingredients
  

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ¾ cup Greek yogurt
  • 1 large egg
  • ½ cup milk dairy or plant-based
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions
 

  • In a large bowl, whisk together all the dry ingredients: flour, baking powder, sugar, and salt.
  • In a separate bowl, mix Greek yogurt, egg, milk, and vanilla extract until smooth. (You can also directly add these ingredients into the mix of dry ingredients like I do.)
  • Pour wet ingredients into dry and stir until just combined; lumps are okay.
  • Heat a skillet over medium heat and grease with butter or oil.
  • Scoop ¼ cup batter per pancake and cook 2-3 minutes until bubbles form.
  • Flip and cook 1-2 minutes until golden brown.
  • Serve warm with your favorite toppings.

Notes

  • Use fresh baking powder for the fluffiest pancakes.
  • Don’t overmix the batter to keep the texture light.
  • Adjust heat if pancakes brown too quickly.
  • Store leftovers in the fridge for 3 days or freeze for a month.
