Ingredients
  

  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tbsp black peppercorns
  • 1 tbsp dried red chili flakes
  • 1 tbsp dried mango powder (amchur)
  • 1 tbsp garam masala
  • 1 tsp ground turmeric
  • 1 tsptsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground cardamom
  • 1 tsp salt

Instructions
 

  • Toasting Whole Spices:
    Begin by toasting the whole spices:
    Heat a dry pan over medium heat.
    Add coriander seeds, cumin seeds, and black peppercorns.
    Toast until fragrant, about 2-3 minutes, stirring occasionally.
    Remove from heat and let cool before grinding
  • Grinding the Spices:
    Once cooled, grind the toasted spices into a fine powder:
    Transfer the toasted spices to a spice grinder or mortar and pestle.
    Grind until the spices reach a fine consistency, ensuring all whole spices are fully ground.
  • Mixing Ground Spices:
    In a mixing bowl, combine the ground spices with the remaining ingredients:
    Add dried red chili flakes, dried mango powder, garam masala, ground turmeric, ground cinnamon, ground cloves, ground cardamom, and salt.
    Mix well until all the spices are evenly incorporated, creating a flavorful masala blend.
  • Storage and Usage:
    Transfer the prepared Seekh Kabab Masala to an airtight container:
    Store in a cool, dry place away from direct sunlight.
