Equipment

  • Air Fryer
  • Measuring Cups and Spoons
  • Mixing bowl

Ingredients

  • 1 cup Biscoff spread
  • 2 eggs
  • 1 cup All-purpose flour

Instructions

  • Step 1: Prepare the Cookie Dough
In a mixing bowl, combine 1 cup of Biscoff spread and 2 eggs.
Gradually add 1 cup of all-purpose flour, mixing until a homogenous dough forms.
  • Step 2: Preheat the Air Fryer
Preheat the air fryer to 320°F (160°C) for 5 minutes.
  • Step 3: Shape the Cookies
With clean hands, Take a portion of the cookie dough mixture and roll it into a ball using your hand.
The size of each ball can vary based on your preference, but aim for consistency to ensure even air frying or baking. Place the ball of dough on a parchment-lined tray.
With the palm of your hand, gently press down on the cookie dough ball to flatten it slightly and create a cookie shape. Ensure it’s not too flat, as the cookies will spread a bit during baking.
Next, using your thumb, press down in the center of the cookie to create a small dent or hole. This indentation will be where we’ll fill the Biscoff spread later, once it is cooked.Repeat this process for the remaining cookie dough.
  • Step 4: Air Fry Cookies
Place the cookie on the air fryer basket or tray, ensuring some space between each cookie to allow for expansion during baking. Depending on the air fryer’s size, you may need to bake in batches. Air fry at 320°F (160°C) for 8-10 minutes until golden brown around the edges.
  • Step 5: Cool and Serve
Once baked, carefully remove the cookies from the air fryer or oven. Let them cool on a wire rack for a few minutes.
While the cookies are still warm, use a spoon or a piping bag to fill the indentation in each cookie with Biscoff spread. Add enough Biscoff to fill the cavity without overflowing.
Allow the cookies to cool completely before serving to allow the Biscoff filling to set.
Enjoy your delicious Biscoff-filled cookies as a yummy treat or snack!

Notes

  • Experiment with additions like chocolate chips, nuts, sea salt, or vanilla extract for customized flavors.
  • Chilling the dough before shaping can help control spreading while baking.
