Ingredients
  

  • 3 eggs
  • whitepepper
  • 1/2 tsp sesameoil
  • 2 tbsp crispy chilli oil
  • Cornstarch slurry
  • Oil
  • 2 spring onions

Instructions
 

  • Step 1: Whisk the Ingredients
    Crack 3 eggs into a mixing bowl. Adda dash of white pepper, and salt for seasoning. Pour in 1/2 teaspoon of sesame oil. Drizzle 1 tablespoon of chili oil into the bowl.
    Whisk the eggs and seasonings together until well combined and slightly frothy.
  • Step 2: Prepare the Cornstarch Slurry
    In a separate small bowl, combine 1 teaspoon of cornstarch with 1 tablespoon of water.
    Whisk the mixture until the cornstarch is fully dissolved, creating a smooth slurry. Mix this cornstarch slurry with the whisked eggs.
  • Step 3: Frying spring onions
    Heat a pan over medium heat. Add a drizzle of oil to the pan and swirl to coat. Once the pan is hot, Add the spring onions and fry them slightly. Pour the whisked egg mixture into the pan.
  • Step 4: Cooking
    Pour the whisked egg mixture into the pan. Take a wooden spoon or a spatula and carefully pull in the edges to the centre to form a ribbons.
  • Step 5: Finish and Serve
    Continue cooking the eggs until they reach your desired consistency and the sauce has thickened slightly.
    Once cooked, transfer the Chilli Scrambled Eggs to a serving plate or bowl. Drizzle a little extra crispy chilli oil over the top for added flavor and heat. Garnish with chopped spring onions for a pop of freshness and color. Serve hot and enjoy the bold and flavorful Chilli Scrambled Eggs!
