Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 1/4 cup mayonnaise
  • 3 tbsp Sriracha sauce
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1/4 CUP cornstarch
  • Salt and pepper, to taste
  • 2 green onions, thinly sliced
  • Sesame seeds
  • Vegetable oil, for frying

Instructions
 

  • Preparation:
    Peel and devein the shrimp, then pat them dry with paper towels to remove excess moisture.
  • Making the Sauce:
     In a bowl, whisk together mayonnaise, Sriracha sauce, minced garlic, grated ginger, honey, and lime juice until well combined. Set aside.
  • Coating the Shrimp:
     Season the shrimp with salt and pepper to taste. Place cornstarch in a shallow dish, then dredge each shrimp in the cornstarch, shaking off any excess.
  • Frying the Shrimp:
    Heat vegetable oil in a deep skillet or fryer over medium-high heat to 375°F (190°C). Carefully add the coated shrimp to the hot oil in batches, frying for 2-3 minutes until golden brown and crispy. Use a slotted spoon to transfer the fried shrimp to a plate lined with paper towels to drain any excess oil.
  • Assembly:
    In a large bowl, toss the fried shrimp with the prepared sauce mixture until evenly coated.
  • Serving:
    Transfer the Dynamite Shrimp to a serving platter, garnish with sliced green onions and sesame seeds, and serve immediately.
