Ingredients
  

  • 1 cup cottage cheese plain, full fat
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1 tablespoon peanut butter
  • ½ cup chocolate chips dark and milk

Instructions
 

  • Set your oven to 350°F (175°C) and allow it to preheat for about 10-15 minutes to ensure it reaches a consistent temperature.
  • Line a baking tray with parchment paper or a silicone baking mat to prevent sticking.
  • In a blender or food processor, combine 1 cup of cottage cheese, 2 tablespoons of maple syrup, and 1 teaspoon of vanilla extract.
  • Blend on medium speed until you get a smooth, creamy consistency.
  • Pour 1 cup of almond flour into the blender and blend again until the flour is just incorporated. (Don't overmix)
  • Scrape the dough into a medium bowl. Add 1 tablespoon of peanut butter and ½ cup of chocolate chips.
  • Fold them in with a spatula until evenly distributed throughout the dough.
  • Scoop the dough into 12 equal portions, about 1.5 inches each, using a spoon or cookie scoop.
  • Place them on the prepared tray, spacing them 2 inches apart. They should be about ½-inch thick.
  • Place the tray in the oven, ensuring it’s at 350°F (175°C). Bake for 10-12 minutes, until the edges are lightly golden and the centers feel set.
  • For softer cookies, aim for 10 minutes; for slightly firmer ones, go closer to 12 minutes.
  • Let the cookies sit on the tray for 5 minutes to firm up. They’re now ready to enjoy!
