Homemade Healthy Broccoli Cheddar Soup
This homemade Healthy Broccoli Cheddar Soup is creamy, cheesy, and full of tender broccoli. It has the rich flavor of classic broccoli cheese soup, but it is made with simple ingredients and can be kept lighter for an easy lunch or dinner.

I like making broccoli cheddar soup when I want something warm and filling without a lot of work. You can make it on the stovetop, in a Crockpot or slow cooker, or adapt it for the Instant Pot, depending on what works best for your day.
Serve it with crusty bread, garlic toast, or a simple salad. You can blend part of the soup for a thicker texture or leave more broccoli pieces in, then stir in the cheddar at the end until smooth and melted.

Ingredients You’ll Need
Using milk instead of heavy cream keeps this soup lighter without losing the creamy texture, since the cheese and a bit of blended broccoli do most of the thickening work. Sharp cheddar melts smoothly and gives more flavor per cup than a milder cheese would.
Ingredients
2 tbsp butter
1 small onion, diced
2 carrots, diced
2 cloves garlic, minced
3 tbsp all-purpose flour
3 cups vegetable or chicken broth
1 1/2 cups milk
4 cups broccoli florets, chopped small
2 cups shredded sharp cheddar cheese
1/2 tsp garlic powder
Salt and pepper, to taste

Directions
- Melt the butter in a large pot over medium heat.
Add the onion and carrots and cook for 6 to 7 minutes, until softened.
Stir in the garlic and cook for 30 seconds, just until fragrant. - Sprinkle the flour over the vegetables and stir constantly for about a minute to cook off the raw flour taste.
Slowly whisk in the broth and milk, continuing to whisk until smooth.
Bring the pot to a simmer. - Add the chopped broccoli and simmer for 12 to 15 minutes, until very tender.
Using an immersion blender, partially blend the soup, leaving some broccoli pieces whole for texture.
If using a countertop blender, transfer about half the soup, blend until smooth, then stir it back into the pot. - Reduce the heat to low and stir in the cheddar cheese and garlic powder, a handful at a time, until melted and smooth.
Keep the heat low here – high heat can cause the cheese to separate and turn grainy instead of staying smooth.
This one takes a bit of patience while the cheese melts in, just so you know, but it’s worth doing slowly. - Season the soup with salt and pepper.
If the soup is too thick, thin it with a splash of extra broth or milk.
Ladle into bowls.
- Serve hot and enjoy!

Slow Cooker / Crockpot Instructions
- Add the broccoli, carrots, onion, garlic, broth, salt, pepper, and any dried seasonings to the slow cooker.
- Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the broccoli and carrots are tender.
- If you prefer a smoother, thicker broccoli cheddar soup, use an immersion blender to blend a small portion of the soup. Leave plenty of broccoli pieces for texture.
- In a small bowl, whisk together the milk or cream and flour until smooth. Stir this mixture into the slow cooker.
- Cover and cook on HIGH for another 20–30 minutes, until the soup has thickened slightly.
- Reduce the slow cooker to LOW or WARM. Add the freshly shredded cheddar a handful at a time, stirring after each addition until melted.
- Taste and adjust the salt and pepper. If the soup is too thick, stir in a little extra broth or milk before serving.
Crockpot Tip
Avoid adding the cheddar at the beginning of the cooking time. Cheese can separate or become grainy when cooked for several hours. Add it near the end for a smoother soup.
Important Recipe Notes
- Keep the heat low once the cheese goes in. High heat can cause the cheese to separate and turn grainy instead of melting smoothly into the soup.
- Only partially blend the soup. Leaving some broccoli pieces whole gives you that classic broccoli cheddar texture, rather than a completely smooth puree.

- Chop the broccoli small. Smaller pieces cook through faster and blend more easily if you’re using an immersion blender directly in the pot.
- This soup uses milk instead of heavy cream, which keeps it lighter without sacrificing much of the classic creamy texture.
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stove over low heat, stirring often to keep the cheese smooth.
- This doesn’t freeze particularly well, since cheese-based soups tend to separate after thawing.
How to Serve, Store & Customize This Recipe
Serving:
Serve hot with a sprinkle of extra shredded cheddar on top and some crusty bread on the side. A bread bowl also works well if you want to make it feel more like a restaurant-style meal.
Storage:
Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stove over low heat, stirring often to keep the cheese from separating.
Customization:
Add diced ham or crumbled cooked bacon for extra protein, or swap the sharp cheddar for a mix of cheddar and gruyere. A pinch of nutmeg adds a subtle warmth without changing the overall flavor much.

Notes
- Pre-shredded cheddar often contains anti-caking ingredients that can keep it from melting as smoothly. Freshly grated cheddar gives the soup a better texture.
- Blend 1–2 cups of the soup and stir it back into the pot, or let the soup simmer uncovered for a few extra minutes.
- Add a little extra broth or milk until the soup reaches the consistency you prefer.
- Sharp cheddar gives the strongest flavor, but mild or medium cheddar can also be used.
- Cut the broccoli into small, even florets so it cooks quickly and is easy to eat.
