🍂 How to Build a Better Fall Salad

Start with a sturdy green like kale, spinach or arugula. Add one roasted vegetable, one fresh fruit, one crunchy topping (toasted nuts or pepitas) and one cheese. Finish with a dressing that has a little sweetness, like maple or honey, to balance bitter greens.

🥗 Make-Ahead Tips

Roast squash, sweet potatoes and beets up to 3 days ahead and keep them chilled. Kale and grain salads can be dressed a few hours early and actually taste better. Keep tender greens, nuts and apple slices separate until right before serving so nothing goes soggy or brown.

Fall salads prove you can eat fresh all season long. Pick a leafy one for a quick weeknight side, a grain salad for meal prep, or a hearty chicken or steak salad when you want it to be dinner.

Save this list for Thanksgiving, potlucks and all the cozy weeknights in between.
