Pumpkin Pecan Date Oat Breakfast Energy Balls
These Pumpkin Pecan Date Oat Breakfast Energy Balls are a no-bake fall snack made with rolled oats, Medjool dates, pumpkin puree, toasted pecans, almond butter, and warm pumpkin pie spice.

They come together in one food processor, and the dates hold everything together so you don’t need much added sugar.
Make a batch on Sunday for grab-and-go breakfasts, school-morning snacks, or something to eat before a workout.
They keep for a week in the fridge.

Ingredients You’ll Need
Soft Medjool dates are the glue here, so skip the dry, pre-chopped kind. Any nut butter works (peanut butter is a fine swap for almond butter), and quick oats can replace rolled oats if that’s what you have.

1 cup packed Medjool dates, pitted (about 10 to 12)
1 1/2 cups old-fashioned rolled oats
1/2 cup pecans, toasted and roughly chopped
1/3 cup pumpkin puree
1/4 cup almond butter
2 tablespoons pumpkin seeds (pepitas)
2 tablespoons ground flaxseed
1 tablespoon maple syrup (optional)
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Directions
- Spread the pecans on a dry skillet and toast them over medium-low heat for 4 to 5 minutes, stirring often, until they smell nutty and darken slightly.
Let them cool for a few minutes before chopping.
Toasting takes five minutes, and it’s the difference between bland energy balls and ones that actually taste like pecans. - If your dates feel firm, soak them in hot water for 10 minutes, then drain and pat them dry.
Add the dates to a food processor and pulse until they break down into a sticky paste that clumps into a ball, about 1 minute.
Scrape down the sides once or twice so no whole pieces hide under the blade. - Add the pumpkin puree, almond butter, maple syrup (if using), vanilla, pumpkin pie spice, and salt.
Blend for about 30 seconds until smooth and evenly orange.
Taste it here and add a pinch more spice if you want it stronger. - Add the oats, ground flaxseed, pumpkin seeds, and half of the chopped pecans.
Pulse 8 to 10 times, just until the oats are broken down a little and everything holds together when you pinch it.
Don’t blend it into a puree, since the oat and nut texture is what makes these feel like a real snack. - Transfer the mixture to a bowl and fold in the rest of the pecans by hand.
If it feels too wet to roll, add oats a tablespoon at a time.
Pumpkin puree varies in moisture, so this part takes a little judgment. - Chill the mixture for 15 to 20 minutes.
It firms up as the oats soak up moisture, and cold dough rolls much more cleanly. - Scoop out 1-tablespoon portions and roll them between your palms into smooth balls.
Slightly damp hands keep the mixture from sticking.
You should get about 18 balls.
- Arrange the energy balls on a parchment-lined tray and refrigerate for at least 30 minutes before eating.
They hold their shape much better once fully chilled.
Move them to an airtight container after that.
- Serve chilled straight from the fridge and enjoy!
Important Recipe Notes
- Use soft, fresh Medjool dates. They’re what binds the mixture. Dry dates make crumbly balls unless you soak them first.
- Blot the pumpkin puree if it’s watery. Spread it on a paper towel for a minute. Too much moisture makes the mixture sticky and hard to roll.
- Use pumpkin puree, not pumpkin pie filling. Pie filling already has sugar and spices added, which throws off the balance.
- Don’t over-process. Pulse the oats instead of running the motor. A little texture keeps them from tasting like paste.

- Store them in the fridge. Keep them in an airtight container for up to 7 days. Because of the pumpkin, they shouldn’t sit at room temperature for more than a few hours.
- Freeze for longer storage. Freeze them on a tray, then move them to a freezer bag for up to 3 months. Let them thaw for 10 minutes before eating.
- Make them nut-free. Use sunflower seed butter and swap the pecans for extra pumpkin seeds. That keeps them lunchbox-friendly for schools with nut rules.
- Add a protein boost. Add 2 tablespoons of vanilla protein powder with the oats. Add a splash of milk if the mixture gets too dry.

Serving:
These pumpkin energy balls taste best cold, so eat them straight from the fridge.
Two or three make a quick breakfast with coffee or a glass of milk. For a dessert-style snack, roll them in a little cinnamon sugar or finely chopped pecans before chilling.
Storage:
Keep them in an airtight glass or plastic container in the fridge for up to a week.
They soften slightly as the days go on, which I actually prefer. In the freezer they keep up to 3 months.

Customization:
Mini chocolate chips, dried cranberries, or chopped dried apples all fold in well at the end.
Swap the pecans for walnuts if that’s what’s in your pantry. For a stronger fall flavor, add a pinch of ground ginger or cardamom with the pumpkin pie spice.
