Ingredients You’ll Need
Block cream cheese gives a firm ball that holds its shape, while the whipped tub kind is too soft. Shred the cheddar yourself, because the finer, fresher shreds blend in more smoothly.
Ingredients
16 oz (450 g) full-fat block cream cheese, softened
2 cups (225 g) finely shredded sharp cheddar cheese
3 green onions, finely sliced
1 tablespoon Worcestershire sauce
1 clove garlic, finely grated (or 1/2 teaspoon garlic powder)
1 teaspoon dry ranch seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1 1/4 cups pecans, finely chopped
2 tablespoons chopped fresh parsley (optional, for coating)
Round butter crackers (like Ritz), plus wheat crackers and pretzel crisps, for serving

Directions
- Let the cream cheese sit at room temperature for about 1 hour until fully softened.
Cold cream cheese leaves lumps and won’t blend with the cheddar.
It’s the one step you really can’t rush. - Toast the chopped pecans in a dry skillet over medium heat for 4 to 5 minutes, stirring often, until fragrant and slightly darker.
Spread them on a plate to cool.
Toasting makes them crunchier and much more flavorful (raw pecans taste a bit flat on a cheese ball). - In a large bowl, beat the cream cheese with a hand mixer until smooth and creamy, about 1 minute.
Add the cheddar, green onions, Worcestershire, garlic, ranch seasoning, smoked paprika, and pepper.
Mix on low speed until everything is evenly combined.
Taste a little on a cracker and adjust the seasoning, since some cheddars are much saltier than others. - Scoop the mixture onto a large piece of plastic wrap.
Gather the wrap around it and twist the top, shaping it into a round ball with your hands.
Refrigerate for at least 2 hours, or overnight, until firm.
If the mixture is too soft to shape at first, chill it in the bowl for 30 minutes and try again. - Mix the toasted pecans with the parsley in a shallow dish.
Unwrap the chilled cheese ball and roll it in the pecans, pressing gently so they stick all over.
Reshape it slightly with your hands if it flattens on the bottom. - Set the cheese ball on a serving board or platter.
Let it sit out for 15 to 20 minutes before serving so it’s easier to spread.
Surround it with plenty of crackers, fanning them out in a ring for a festive look. - Add a small cheese knife, serve with crackers, and enjoy!

Important Recipe Notes
- Use block cream cheese. Spreadable tub cream cheese has extra air and moisture, so the ball won’t hold its shape. Full-fat block cream cheese is the way to go.
- Chill before coating. A firm, cold cheese ball rolls neatly in the pecans. Coating it while soft is messy and leaves you with a lopsided ball.
- Toast the pecans. It only takes a few minutes and adds a deep, nutty crunch. Let them cool before rolling so they don’t melt the surface.
- Make it ahead. Mix and shape the cheese ball up to 2 days ahead and keep it wrapped in the fridge. Roll it in the pecans on the day you serve it so they stay crunchy.
- Let it soften before serving. Straight from the fridge it’s too firm to spread and can break crackers. Fifteen to twenty minutes on the counter is just right.
- Pick sturdy crackers. Buttery round crackers are classic, but have some sturdier wheat crackers or pretzel crisps too. Thin crackers snap when guests scoop.
- Shape it neatly. Twisting the plastic wrap tightly at the top pulls the cheese into a smooth, round ball. Chill it on a small bowl so it keeps its round shape instead of flattening.
- Storage. Wrap leftovers tightly and refrigerate for up to 5 days. The pecans soften slightly but it still tastes great.
- Make two smaller balls. For two parties, or two ends of a long table, divide the mixture in half and shape two smaller balls. Chill time drops to about 1 1/2 hours.
- Freezing. Freeze the uncoated cheese ball, wrapped in plastic and foil, for up to 1 month. Thaw overnight in the fridge and roll in fresh pecans before serving.

How to Serve, Store & Customize This Recipe
Serving Set the Christmas cheese ball in the center of a large board and surround it with crackers, apple slices, celery sticks, and pretzel crisps. A few sprigs of rosemary around the edge make it look like a wreath. Put out a small knife or spreader so guests don’t break crackers in it.
Storing Wrap leftovers tightly in plastic wrap and refrigerate for up to 5 days. If the outside looks messy after the party, reshape it with your hands and roll it in a few fresh pecans. It’s great spread on bagels or sandwiches too.
Customizing Stir in 1/2 cup of chopped dried cranberries for a sweet-tart Christmas flavor, or add crumbled cooked bacon. Swap the pecans for chopped walnuts, everything bagel seasoning, or a mix of chopped parsley and chives. For a spicy version, add a diced jalapeno and use pepper jack in place of half the cheddar.
