🫘 Best Meatless Protein Sources for Pasta Salad

Beans and chickpeas add about 7g of protein per half cup, eggs 6g each, feta and mozzarella about 6g per ounce, and edamame 9g per half cup. Swapping regular pasta for chickpea or lentil pasta can nearly double the protein from the noodles. Combine two or three sources to reach 20g or more per serving.

🍱 Meal Prep and Storage

Most of these pasta salads keep for 3 to 4 days in the fridge. Store creamy dressings separately if you can and add them the day you eat it. Keep crunchy toppings, nuts, herbs and avocado separate until serving. Rinse cooked pasta under cold water so it doesn’t turn mushy.
