Healthy Chicken Bean Soup

Ingredients You’ll Need
Cutting the raw chicken into bite-sized chunks before cooking lets it poach directly in the broth, picking up flavor as it simmers. Using both red and white beans gives the soup more visual contrast and a slightly different bite from each variety.

1 lb boneless, skinless chicken breast or thighs, cut into bite-sized chunks
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) red kidney beans, drained and rinsed
1 can (15 oz) white cannellini beans, drained and rinsed
6 cups chicken broth
1 tsp dried thyme
1 bay leaf
Salt and pepper, to taste
Chopped fresh parsley, for serving

Directions
- Heat the olive oil in a large pot over medium-high heat.
Season the chicken chunks with salt and pepper and add them to the pot.
Cook for 5 to 6 minutes, stirring occasionally, until browned on the outside (it doesn’t need to be fully cooked through yet).
- Transfer the chicken to a plate and set aside.
In the same pot, add the onion, carrots, and celery, cooking for 6 to 7 minutes, until softened.
Stir in the garlic and cook for 30 seconds, just until fragrant.
- Add the diced tomatoes, both types of beans, chicken broth, thyme, and bay leaf.
Return the browned chicken to the pot along with any accumulated juices.
Bring to a boil, then reduce the heat to low and simmer for 25 to 30 minutes.
- Check that the chicken is fully cooked through by cutting into a smaller chunks with the help of fork and kinfe.
