Homemade Garlic Parmesan Eggplant (Baked Or Air Fry)
This Homemade Garlic Parmesan Baked Eggplant is sliced eggplant coated in a garlicky parmesan breadcrumb crust and baked until golden and crisp.
No frying involved, and no soggy eggplant either, as long as you don’t skip the salting step.
I make this when I want something that eats like a fried appetizer without actually standing over a pot of oil. It works as a side dish next to pasta, or as a snack on its own dipped in marinara. Try it alongside Spaghetti with Olive Oil and Garlic Sauce (Pasta Aglio E Olio) for an easy vegetarian dinner, or pair it with Sheet Pan Gnocchi with Tomatoes and Red Onion for something heartier.
If crispy baked vegetables and easy Italian sides are your thing, these are worth bookmarking too:

Ingredients You’ll Need
Salting the eggplant slices first pulls out the excess moisture that would otherwise turn the coating soggy in the oven (it’s an extra 30 minutes, but it’s the step that actually makes this work).
Panko breadcrumbs give a noticeably crunchier coating than regular breadcrumbs, and fresh garlic mixed right into the crust beats garlic powder alone for flavor.
Ingredients
2 medium eggplants, sliced into 1/2-inch rounds
1 teaspoon salt, for sweating the eggplant
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated parmesan cheese
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Olive oil spray
Fresh parsley, chopped, for garnish

Directions
- Lay the eggplant slices out on a baking sheet lined with paper towels and sprinkle both sides with the salt.
Let them sit for 30 minutes. You’ll see beads of moisture form on the surface, that’s the water you don’t want in the oven.
Pat the slices completely dry with paper towels before moving on. - Preheat the oven to 425°F and line a large baking sheet with parchment paper.
In a shallow bowl, whisk the eggs. In a second shallow bowl, combine the panko, parmesan, minced garlic, Italian seasoning, garlic powder, and black pepper. - Dip each eggplant slice into the egg, letting the excess drip off, then press it into the panko mixture, coating both sides evenly.
Press firmly so the coating sticks (a light dip won’t hold up once the slices go in the oven). - Arrange the coated slices in a single layer on the baking sheet, leaving space between each one.
Spray the tops generously with olive oil spray. This is what gets the coating golden and crisp instead of pale and dry. - Bake for 12 minutes, then flip each slice carefully with a spatula and spray the second side with olive oil.
Bake for another 10 to 12 minutes, until both sides are golden brown and crisp.
This one takes a bit of attention near the end. Ovens vary, and the coating can go from golden to too dark fast in the last few minutes. - Let the slices rest for 2 to 3 minutes on the baking sheet before serving (they firm up slightly as they cool).
Garnish with fresh parsley and serve warm and enjoy!

Important Recipe Notes
- Don’t skip the salting step. This is the difference between crisp eggplant and soggy eggplant. Skipping it saves 30 minutes but costs you the texture, and that trade isn’t worth it.
- Press the coating on firmly. A light dip in the panko mixture won’t stick through baking. Press each slice into the breadcrumbs so the coating really adheres.
- Don’t crowd the baking sheet. Slices touching each other steam instead of crisping. Use two baking sheets if you need to, rather than piling everything onto one.
- Spray generously with olive oil. This step does the work that frying oil would otherwise do. Skimping on it leaves the coating pale and a little dry instead of golden.
- Storage. Store leftovers in an airtight container in the fridge for up to 3 days. The coating softens over time, so it won’t be quite as crisp reheated.
- Reheating. Reheat in the oven or air fryer at 375°F for about 5 to 7 minutes to bring back some crispness. The microwave works in a pinch, but the coating turns soft.
- This one has a few steps. Between salting, dredging, and the two-stage bake, it’s not a five-minute side. Worth it for the texture, just plan ahead a little.
Air Fryer Version
This recipe works just as well in the air fryer, and it’s actually the faster option if you’re only making a small batch.
Follow the same steps for salting the eggplant and setting up the egg and panko coating.
Preheat the air fryer to 400°F. Arrange the coated eggplant slices in a single layer in the basket, working in batches if needed so they’re not overlapping, and spray both sides with olive oil.
Air fry for 8 to 10 minutes, flipping halfway through and spraying the second side again, until golden brown and crisp.
The air fryer version comes out just as crisp as the oven-baked one, sometimes a little crispier, and it shaves a few minutes off the total cook time.
Just watch it closely toward the end, since air fryer baskets can run hotter than a standard oven and the coating can go from golden to burnt quickly.

How to Serve, Store & Customize This Recipe
Serving:
Serve these warm, straight from the oven or air fryer, with a side of warm marinara for dipping.
They also work layered into a sandwich, or served over a bed of greens with a light vinaigrette for something lighter.
Storing:
Store leftovers in an airtight container in the refrigerator for up to 3 days. They lose some of their crispness as they sit, so reheat them in the oven or air fryer rather than the microwave if you want the texture back.
Customization:
Swap the parmesan for pecorino romano for a sharper, saltier crust.
Add a pinch of red pepper flakes to the breadcrumb mixture for some heat, or top the finished slices with melted mozzarella and a spoonful of marinara for an eggplant parmesan-style version.
