Next, I separate 100g of egg whites and whisk them until they form soft peaks. I gently fold the egg whites into the oat mixture, being careful not to deflate them too much.

I heat a non-stick pan over medium heat and add a small amount of ghee. Ghee adds a delightful nutty flavor, but you can also use butter or cooking spray.

Using a ladle, I pour a thin layer of batter onto the hot pan and cook it for about 2 minutes per side, or until it’s golden brown. I repeat this process until all the batter is used up.
