Chicken Casserole With Spinach, Eggs and Cheese – Strata
This Strata is made with cubed bread soaked overnight in a savory egg custard, layered with shredded chicken, wilted spinach, and cheddar cheese, then baked until puffed and golden. The overnight soak is what gives strata its custardy, bread-pudding-like texture instead of just tasting like scrambled eggs on toast.
I make this the night before a brunch or holiday morning, since all the work happens ahead and it’s just a bake in the morning. It’s also a good way to use up bread that’s starting to go stale. Ingredients You’ll Need
Slightly stale, sturdy bread works better here than soft fresh bread, since it holds its shape while soaking up the custard overnight. Rotisserie chicken makes this one easy, and wilting the spinach first keeps it from releasing too much water into the custard.

8 cups cubed day-old bread
1 tbsp olive oil
3 cups fresh spinach
2 cups cooked chicken, shredded
1 1/2 cups shredded cheddar cheese
8 large eggs
2 1/2 cups milk
1/2 tsp garlic powder
1/2 tsp dried thyme
Salt and pepper, to taste

Directions
- Grease a 9×13-inch baking dish and spread the cubed bread evenly in the bottom.
Heat the olive oil in a skillet over medium heat and add the spinach, cooking until wilted, about 2 minutes.
Scatter the wilted spinach, shredded chicken, and 1 cup of the cheddar cheese over the bread. - In a large bowl, whisk together the eggs, milk, garlic powder, thyme, salt, and pepper until well combined.
Pour the egg mixture evenly over the bread and toppings, making sure everything gets some liquid.
