  • Heat the oven to 400°F and scrub the sweet potatoes under running water.
    Prick each one several times with a fork, set them on a foil-lined baking sheet, and roast for 45 to 60 minutes, until they’re completely soft and the skins look wrinkly.
    Some of the sugars will leak out and caramelize on the foil (that’s a good sign they’re done).
    Roasting dries the flesh out, and drier sweet potato means the dough needs less flour.
  • Let the sweet potatoes cool for about 10 minutes, just until you can handle them.
    Slice them open and scoop the flesh into a large bowl, leaving the skins behind.
    Mash until completely smooth with a potato masher or ricer, since any stringy bits or lumps will show up in the finished gnocchi.
  • Stir the 2 teaspoons of salt into the warm mashed sweet potato.
    Add 2 cups of the flour, about half a cup at a time, mixing with a wooden spoon or your hands after each addition.

  • Mash while warm. Warm sweet potato mashes smooth and blends into the flour easily. Once it’s cold, it gets gluey and harder to work with.
  • Test one gnocchi first. Boil a single piece before cutting the whole batch. If it falls apart, knead a little more flour into the dough and try again.
  • Salt the cooking water well. The dough only has 2 teaspoons of salt, so well-salted water makes a real difference in the final flavor.
  • Freeze them raw. Freeze the cut gnocchi on a floured tray until firm (about 1 hour), then bag them for up to 2 months. Boil straight from frozen and add a minute or so to the cooking time.
  • Don’t refrigerate uncooked gnocchi overnight. The dough releases moisture and gets sticky in the fridge. Cook them the same day or freeze them.
